500g ready-to-cook beef ravioli 400g tin chopped tomatoes Small bunch basil 250g tub mascarpone cheese 65g grated Parmesan cheese
Pre-heat the grill to high and bring a large pan of salted water to the boil. Add the ravioli to the pan, return to the boil and cook for a few minutes, according to the packet instructions. Meanwhile, pour the tinned tomatoes into a non-metal bowl and microwave on high for 2 mins. Drain the ravioli and transfer to a baking dish. Pour the tomatoes over the top of the ravioli and sprinkle with a few basil leaves. Season with salt and freshly ground black pepper and spoon over the mascarpone. Sprinkle on the grated Parmesan and the remaining basil leaves. Place the dish under the grill until the cheese is golden and bubbling.
