Hal­loumi salad with herby dress­ing

Takes 15mins serves 4 To make the dress­ing, put 100g nat­u­ral yo­ghurt, a hand­ful chopped co­rian­der, 1tbsp chopped mint, finely diced red onion and 1 crushed gar­lic clove in a jar and tighten the lid. Shake well to mix the in­gre­di­ents. Toss to­gether 1 bag mixed salad leaves, chopped cu­cum­ber, 10 cherry toma­toes and 1 finely sliced red pep­per and put in a serv­ing dish. Heat a grill to medium and grill 250g pack hal­loumi, thickly sliced on both sides un­til golden. Serve with the salad and driz­zle over the dress­ing.
