Halloumi salad with herby dressing
Takes 15mins serves 4 To make the dressing, put 100g natural yoghurt, a handful chopped coriander, 1tbsp chopped mint, finely diced red onion and 1 crushed garlic clove in a jar and tighten the lid. Shake well to mix the ingredients. Toss together 1 bag mixed salad leaves, chopped cucumber, 10 cherry tomatoes and 1 finely sliced red pepper and put in a serving dish. Heat a grill to medium and grill 250g pack halloumi, thickly sliced on both sides until golden. Serve with the salad and drizzle over the dressing.
