Spring veg with halloumi
Takes 20mins serves 6 250g halloumi, sliced 2tbsp olive oil 1 head of fennel, sliced 4 spring onions, sliced 500g pack spring greens 1 carrot, grated 350g fruity couscous
Heat a frying pan, add the halloumi and fry for 3 mins, until browned. Set aside. In the same pan, heat 1tbsp oil, add the fennel and spring onions and stir-fry for 2 mins. Add the greens and carrot and heat through for a few mins. Top with the halloumi and drizzle over 1tbsp oil. Serve with the couscous.
