SPEEDY ONE-PAN DINNER

Heat 2tbsp olive oil in a non-stick frying pan. Add 1 sliced red onion and 350g diced butternut squash and fry for 10 min until soft. Add 120g diced chorizo, then pour in 6 lightly beaten eggs. Cook for 5min. Meanwhile, preheat the grill. Add 120g sliced goat’s cheese and 3tbsp chopped chives to the eggs in the pan, fry on a low heat for a couple of min, then pop under a hot grill for a few mins until firm and golden.
