Heat 2tbsp olive oil in a non-stick fry­ing pan. Add 1 sliced red onion and 350g diced but­ter­nut squash and fry for 10 min un­til soft. Add 120g diced chorizo, then pour in 6 lightly beaten eggs. Cook for 5min. Mean­while, pre­heat the grill. Add 120g sliced goat’s cheese and 3tbsp chopped chives to the eggs in the pan, fry on a low heat for a cou­ple of min, then pop un­der a hot grill for a few mins un­til firm and golden.
