Takes 1hr 30mins serves 8 175g plain flour 2tsp bak­ing pow­der 1⁄2 tsp bi­car­bon­ate of soda 1⁄2 tsp salt 100g dark choco­late chunks 150g caster sugar 125g un­salted but­ter, melted 2 eggs 4 over­ripe ba­nanas, mashed 1tsp vanilla ex­tract

1 Pre­heat oven to 160¡C/gas 3. Sift the flour, bak­ing pow­der, bi­car­bon­ate of soda and salt to­gether, then add the choco­late and mix well.

2 In a bowl, beat the sugar and but­ter. Mix in the eggs, ba­nanas and vanilla ex­tract. Stir in the flour mix­ture,.

3 Spoon into a greased and lined 1kg loaf tin and bake, for 1hr or un­til it’s firm.
