Jam crum­ble Squares

Takes 1hr makes 15 squares 300g plain flour 200g un­salted but­ter, cubed 100g ground al­monds 100g caster sugar pinch salt 350g plum con­serve 50g flaked al­monds ic­ing sugar for dust­ing

1 Pre­heat the oven to 180°C/ Gas 4. Tip the flour into the bowl of a food pro­ces­sor and add the but­ter, ground al­monds, caster sugar and salt. Whizz un­til the mix­ture binds to­gether.

2 Add three quar­ters of the mix­ture into the base of a greased and lined 18 x 28cm tin, spread it out evenly and then press it down very firmly. Spread the con­serve over evenly.

3 Mix the flaked al­monds into the re­main­ing crumb mix­ture, and press it to­gether so it forms larger chunks. Scat­ter the crumb mix­ture over the top of the jam. 4 Bake for 45mins. Re­move from the oven. Leave to cool in the tin. Dust with ic­ing sugar.
