To make the pan­cakes, Sift 50g plain flour into a bowl and make a well. Crack in 1 egg and grad­u­ally mix, stir­ring in 200ml milk un­til you have a smooth bat­ter. Heat a non-stick fry­ing pan and melt a knob of but­ter. Pour in a small amount of bat­ter. Cook for a few mins on each side un­til golden. Keep warm on a plate while you make the rest. In another pan, heat 75g light mus­co­v­ado sugar gen­tly for a few mins, add 75g but­ter and cook for a few mins un­til smooth. Add juice 1⁄2 lemon and 100g blue­ber­ries. Cook for a few mins. Add 1 sliced ba­nana and coat well in the sauce. Fill the pan­cakes with the ba­nana and fold up. Top with sauce and blue­ber­ries.
