To make the pancakes, Sift 50g plain flour into a bowl and make a well. Crack in 1 egg and gradually mix, stirring in 200ml milk until you have a smooth batter. Heat a non-stick frying pan and melt a knob of butter. Pour in a small amount of batter. Cook for a few mins on each side until golden. Keep warm on a plate while you make the rest. In another pan, heat 75g light muscovado sugar gently for a few mins, add 75g butter and cook for a few mins until smooth. Add juice 1⁄2 lemon and 100g blueberries. Cook for a few mins. Add 1 sliced banana and coat well in the sauce. Fill the pancakes with the banana and fold up. Top with sauce and blueberries.
