Takes 45 mins serves 4 Make the dough fol­low­ing the Neapoli­tan recipe up to end of Step 4. Make garlic oil by gen­tly heat­ing 2tbsp ex­tra vir­gin olive oil in a small saucepan with 3 crushed garlic cloves to in­fuse. Pre­heat the oven to 230°C/gas 8 and pre­warm two bak­ing sheets. When the bak­ing trays are hot, di­vide the dough into two and roll out. Place on to the bak­ing sheets. Driz­zle the garlic oil over the dough and top with 1 finely sliced red chilli. Bake for 9 mins un­til the dough is golden and crisp. Re­move from the oven and top with 2 hand­fuls of rocket leaves to serve.
