Green pesto

1 Mix a dol­lop of pesto into a pot of sour cream or crème fraîche for a tasty dip to serve with cru­dités or bread­sticks. 2 Stir pesto into your bread dough to bake a fra­grant roll or loaf. Al­ter­na­tively, mix it with soft­ened but­ter to spread onto soft rolls and serve with your main meal. 3 In­stead of us­ing but­ter, gar­nish your veg­eta­bles with a spoon­ful of pesto. Mix it through the veg­eta­bles in the pan while still hot or stir it through veg­eta­bles in a roast­ing tray be­fore oven cook­ing. 4 Use pesto to mar­i­nate meat or fish be­fore roast­ing or grilling. Leave for at least an hour, or overnight if pos­si­ble, cov­ered and chilled, be­fore cook­ing. 5 Add a cou­ple of ta­ble­spoons of pesto to your mashed potato for an ex­tra flavour boost. Or, for a health­ier alternative, stir it through cooked cous­cous or quinoa.
