Takes 1hr 30mins serves 8 FOR the cake 175g but­ter, soft­ened 175g golden caster sugar 3 medium eggs 1tsp vanilla ex­tract grated zest of 1 or­ange 225g self-rais­ing flour, sifted 1tsp ground cin­na­mon FOR the ic­ing 100g but­ter, soft­ened 225g ic­ing sugar, sifted 1tsp or­ange food colour­ing 260g or­ange choco­late match­sticks

1 Heat oven to 190°C/gas 5. But­ter and flour a 1.4ltr pud­ding bowl and line the base with grease­proof paper. 2 Cream the but­ter and sugar, grad­u­ally beat in the eggs, then fold in the vanilla, or­ange zest, flour and cin­na­mon. Spoon into the pre­pared pud­ding basin. 3 Bake for 45 mins-1 hr, un­til a skewer comes out clean. Turn out the cake, re­move paper and leave to cool com­pletely. 4 For the ic­ing, beat the but­ter and ic­ing sugar to­gether un­til creamy. Stir in the colour­ing, mix well and spread over the cake. 5 Ar­range the or­ange choco­late match­sticks to look like a bon­fire and top with sparklers.
