1 Sprinkle a few on your porridge. 2 Take 125g walnuts, 175g pitted dates, 1tbsp coconut oil, 30g shredded coconut,
1/2tsp vanilla essence and a pinch of sea salt, and whizz until smooth. Roll into balls and refrigerate for a brain-boosting snack. 3 For a healthy pesto, blend 50g walnuts with 1 garlic clove, a handful each of basil leaves and grated Parmesan plus 2 sun-dried tomatoes. 4 Nothing beats classic coffee cake. Combine 250g butter, 280g self-raising flour, 250g golden caster sugar, 1/2tsp baking powder, 4 eggs, 1tsp vanilla extract, 40ml strong black coffee and 85g chopped walnuts, then bake in two tins for 25-30 mins at 180C/gas 4. 5 Take a handful each of breadcrumbs and chopped walnuts, a squeeze of lemon, 1 minced garlic clove and 1tbsp olive oil, combine and press on top of 2 salmon fillets. Bake at 180C/gas 4 for 20 mins.
