1 Sprin­kle a few on your porridge. 2 Take 125g wal­nuts, 175g pit­ted dates, 1tbsp co­conut oil, 30g shred­ded co­conut,

1/2tsp vanilla essence and a pinch of sea salt, and whizz un­til smooth. Roll into balls and re­frig­er­ate for a brain-boosting snack. 3 For a healthy pesto, blend 50g wal­nuts with 1 gar­lic clove, a hand­ful each of basil leaves and grated Parme­san plus 2 sun-dried toma­toes. 4 Noth­ing beats clas­sic cof­fee cake. Com­bine 250g but­ter, 280g self-rais­ing flour, 250g golden caster sugar, 1/2tsp baking pow­der, 4 eggs, 1tsp vanilla ex­tract, 40ml strong black cof­fee and 85g chopped wal­nuts, then bake in two tins for 25-30 mins at 180C/gas 4. 5 Take a hand­ful each of bread­crumbs and chopped wal­nuts, a squeeze of lemon, 1 minced gar­lic clove and 1tbsp olive oil, com­bine and press on top of 2 salmon fil­lets. Bake at 180C/gas 4 for 20 mins.
