CHEESE, LEEK & PANCETTA PIE

1kg Maris Piper potatoes, cut into chunks 2tbsp olive oil 1 onion, chopped 500g leeks, sliced 80g pancetta, diced
30g butter 250ml milk 1 egg, beaten Bunch flat leaf parsley, chopped 1tsp smoked paprika 100g Cheddar cheese
1the Boil potatoes for 20min. Heat oil then over a low heat, fry the onion and leeks for 8min. Add the pancetta and fry for 2min. 2 Preheat oven to 190°C/fan 170°C/gas 5. Drain potatoes, place over a low heat with butter and milk till it bubbles. Remove and mash. Stir in the egg and season. 3 Add leek mix, parsley, paprika and 1⁄2 cheese. Spoon into 1.5ltr buttered ovenproof dish. Sprinkle over rest of cheese. Bake for 45min.
