CHEESE, LEEK & PANCETTA PIE

1kg Maris Piper pota­toes, cut into chunks 2tbsp olive oil 1 onion, chopped 500g leeks, sliced 80g pancetta, diced

30g but­ter 250ml milk 1 egg, beaten Bunch flat leaf pars­ley, chopped 1tsp smoked paprika 100g Ched­dar cheese

1the Boil pota­toes for 20min. Heat oil then over a low heat, fry the onion and leeks for 8min. Add the pancetta and fry for 2min. 2 Pre­heat oven to 190°C/fan 170°C/gas 5. Drain pota­toes, place over a low heat with but­ter and milk till it bub­bles. Re­move and mash. Stir in the egg and sea­son. 3 Add leek mix, pars­ley, paprika and 1⁄2 cheese. Spoon into 1.5ltr but­tered oven­proof dish. Sprin­kle over rest of cheese. Bake for 45min.
