1 veg­etable stock cube 350g spaghetti 1⁄2 head broc­coli, bro­ken into small flo­rets 2tbsp olive oil

2 gar­lic cloves, crushed 1 red chilli, de­seeded and finely chopped

4tbsp Parme­san, grated

Crum­ble the veg­etable stock cube into a pan of wa­ter and bring to the boil. Add the spaghetti to the pan. Re­turn to the boil and cook for 6min. Tip the broc­coli flo­rets into the pan with the spaghetti and cook to­gether for a fur­ther 4min, then drain. Add the olive oil to a hot fry­ing pan, tip in the gar­lic and chilli, and cook for 3min. Add the drained spaghetti and broc­coli, then sea­son and toss well. Di­vide on to plates and sprin­kle with Parme­san cheese to serve.
