Breakfast is the most important meal of the day. It sets the tone for the rest of the day.
You need something that is going to energise you and keep you full.
This open faced avocado and egg breakfast sandwich only takes 10 minutes to make and fills you with protein, good fats and carbohydrates. The perfect start!
Ingredients 1 egg 1 slice of toast (wholemeal, sourdough, rye) 1/2 avocado salt and pepper to taste
Instructions Open the avocado, remove the skin, and place half of the avocado in a small bowl. Add salt and pepper to taste and smash.
Toast one piece of the bread.
Cook egg to your preferred level of doneness.
Add the avocado to the top of the toast. Top with your egg. Enjoy.
