Vegan Nettle Pesto
2 cups fresh nettles or 4 tablespoons of dried and soaked nettles 1-2 tbsps nutritional yeast 2 tbsps cashew nuts or sunflower seeds 1 clove garlic Cold pressed olive oil Unrefined sea salt
Blanche the nettles: Place in boiling water for 30 seconds, then strain and rinse with cold water. Squeeze the extra water out and put in a blender. Add the nutritional yeast, nuts and/ or seeds and garlic. Blend and add oil little by little to get a texture of spreadable paste. Add salt. Enjoy with pasta, bread, veggies or chips.
Dilute the boiling water with extra water and use it as fertiliser in your garden. You can even rinse your hair with nettle water. According to Finnish folklore, nettle water makes your hair strong and shiny and may even prevent receding.
