Ve­gan Net­tle Pesto

2 cups fresh net­tles or 4 ta­ble­spoons of dried and soaked net­tles 1-2 tb­sps nu­tri­tional yeast 2 tb­sps cashew nuts or sun­flower seeds 1 clove gar­lic Cold pressed olive oil Un­re­fined sea salt

Method

Blanche the net­tles: Place in boil­ing wa­ter for 30 sec­onds, then strain and rinse with cold wa­ter. Squeeze the ex­tra wa­ter out and put in a blender. Add the nu­tri­tional yeast, nuts and/ or seeds and gar­lic. Blend and add oil lit­tle by lit­tle to get a tex­ture of spread­able paste. Add salt. En­joy with pasta, bread, veg­gies or chips.

Tip

Di­lute the boil­ing wa­ter with ex­tra wa­ter and use it as fer­tiliser in your gar­den. You can even rinse your hair with net­tle wa­ter. Ac­cord­ing to Fin­nish folk­lore, net­tle wa­ter makes your hair strong and shiny and may even pre­vent re­ced­ing.
