LOOK­ING for big in­vest­ment are the team be­hind new Bri­tish restau­rant con­cept Hollings, and the owner of an Ital­ian­in­spired fresh pasta stall known as The Cheese Wheel.

Hop­ing to con­vince the big-money in­vestors, they will each trial their con­cept for three days at premises in the cen­tre of Manch­ester, where they also have to win over the pay­ing public.

Hollings is the brain­child of ex-Hix Group head chef Ron­nie Mur­ray and bar man­ager James Ran­dall. The pair are look­ing for £200k to open their first venue in Lon­don. Gra­ham Brad­bury is the man be­hind The Cheese Wheel and who be­lieves he could have the next Ital­ian-in­spired chain on his hands.
