— 50ml pea-pod juice (feed washed pea pods through a juicer) — 15ml lo­vage cor­dial (we make this sim­ple syrup in­fused with lo­vage leaves and co­rian­der seeds at Spring, but you can re­place with el­der­flower cor­dial) — 25ml le­mon juice — ice cubes — cel­ery salt, to sprin­kle Place the pea-pod juice, cor­dial, le­mon juice and a hand­ful of ice cubes in a cock­tail shaker and com­bine. Pour into a glass and top up with still or sparkling water. Sprin­kle with a lit­tle cel­ery salt and serve im­me­di­ately.
