I used to en­joy dis­cov­er­ing restau­rants spon­ta­neously when trav­el­ling. But such is the de­mand now, es­pe­cially if you are eat­ing out on a Fri­day or Satur­day night, that you re­ally need to do your re­search and book ahead. One al­ter­na­tive is to re­serve for lunch, which is al­ways far cheaper than the evening meal. It does take up a chunk of the day, but it works well if you en­joy go­ing to cul­tural events in the evening.
