Simple is not boring for simpletons like me

Three cheers for lovely Nigella Lawson, a woman so wonderful I could devour her whole. Nigella has a new cookbook out, At My Table, and is being criticised because it includes recipes for ham and cheese toasties, roasted carrots and mashed potatoes. “Boring! You might as well grab a pack of noodles from the supermarke­t,” complained one fan on social media. But that’s exactly the problem, isn’t it? If you can’t cook, ready meals are all that’s available to you. Rock up to Waterstone­s and try to buy a recipe book and you will be greeted by a wall of manuals explaining in flowery language (note, not floury) how to make a pomegranat­e-braised pork belly with sautéed kale. This is not so good for someone who simply wants to feed themselves healthy, home-cooked food but hasn’t the foggiest where to start (I’m talking about myself here, obviously). So don’t listen to the haters, Nigella. The clueless cooks among us need you.
