50ml Chilton Damson Gin 20ml fresh lemon juice 20ml Cointreau

1 egg white

Method

Dry shake all ingredients hard in a cocktail shaker

(to froth the egg white), then shake with ice. Serve in a coupe glass. Garnish with mint leaf on foam. Chilton Damson Gin can be enjoyed as a hip-flask filler in winter served with cheese or as a digestif after dinner.
