To make the dressing, place the garlic, oil and vinegar in an old jam jar along with a good pinch of salt and pepper and shake. Arrange the baby gem lettuce on a large serving plate, topping with all the other ingredients.
Spoon over the dressing and serve immediately.
This delightfully simple recipe is a fabulous way of using up older rabbits, which may otherwise be a trifle tough.
