To make the dress­ing, place the gar­lic, oil and vine­gar in an old jam jar along with a good pinch of salt and pep­per and shake. Ar­range the baby gem let­tuce on a large serv­ing plate, top­ping with all the other in­gre­di­ents.

Spoon over the dress­ing and serve im­me­di­ately.

This de­light­fully sim­ple recipe is a fab­u­lous way of us­ing up older rab­bits, which may other­wise be a tri­fle tough.
