Overnight oats with blue­berry, vanilla and chia

Serves 1

60g rolled oats

A few drops vanilla ex­tract

1 tbsp chia seeds 175ml unsweet­ened al­mond milk

2 tbsp fresh or frozen blue­ber­ries

Com­bine the oats, vanilla ex­tract and chia seeds in a small glass jar, cover with the milk, stir to mix and top with blue­ber­ries. You could use any other berries or even dried fruits, which will plump up as the mix­ture soaks.

Close with a lid and put in the fridge for a few hours – prefer­ably more than eight, or bet­ter still, overnight.
