I am so tempted to make wild and won­der­ful sal­ads in the sum­mer. Crisp, crunchy, fresh tum­bles of tex­ture, bite and colour. Rice sal­ads, warm sal­ads, fresh sal­ads, grilled sal­ads. Some are starters, a cel­e­bra­tion of sea­sonal fruit and veg, while oth­ers are heartier – ve­hi­cles for meat or fish, cheese or nuts. That they are so good for you is a happy co­in­ci­dence.
