Green spice mar­tini

10 curry leaves, plus 1 ex­tra to gar­nish 50ml vodka 20ml le­mon juice 10ml sugar syrup or Monin gomme syrup 1 tsp fresh gin­ger juice (see right) Mud­dle (bash with the end of a wooden spoon) the curry leaves in a shaker, add all the liq­uids and a hand­ful of ice, and shake hard. Strain into a chilled mar­tini glass and dec­o­rate with a curry leaf.

The gin­ger juice adds a real kick to this. To make it, peel and grate a knob of fresh gin­ger, then squeeze with your hands (or tie in muslin and squeeze) to ex­tract the liq­uid.
