Grilled mack­erel Ver­sa­tile fish that’s ideal paired with salad

OF all the dishes I have cooked in my time as a chef, mack­erel is one of my all-time favourites. It’s very ver­sa­tile – you can smoke it, pickle it, lightly fry it, turn it into a great tast­ing pate or grill it, as in this recipe.

Serves 4

4 mack­erel fil­lets

1 tub creme fraiche

3 lemons, juiced

1 bunch chives ½ packet dill

2 plum toma­toes

1 packet salad leaves Vinai­grette
