Home­made beef burg­ers

Many peo­ple feel it’s a bit of a chore to make their own burg­ers or fish fin­gers, but I like to be­cause it’s the only way I can be sure what has gone into them. Ben some­times buys ready-made burg­ers when we are in Devon, but I can’t com­plain too much as he is the one who does the shop­ping and he gets them from an ex­cel­lent lo­cal butcher. Th­ese burg­ers are also per­fect for pic­nics or bar­be­cues at home and away – and, even bet­ter, all the boys like them! MAKES 1 medium onion, peeled 1 gar­lic clove, peeled 500g good-qual­ity beef mince 1 tsp Di­jon mus­tard 1 tsp Worces­ter­shire sauce 1 tsp soy sauce 1 large egg pinch of chilli pow­der (op­tional) plain flour, for coat­ing (op­tional) olive or sun­flower oil, for fry­ing salt and freshly ground black pep­per TO SERVE 6 good-qual­ity burger buns selec­tion of top­pings, eg, sliced Ched­dar, let­tuce, toma­toes, gherkins, mus­tard, mayo, ketchup
