THIS WEEK: POMEGRANATES
Pomegranates have antioxidant properties that are thought to help prevent certain cancers and help us live longer. Chemicals called ellagitannins, which are found in high levels in pomegranates, are turned into a metabolic compound called urolithin in our guts. Studies have suggested that urolithins can strengthen muscles and also help slow the progress of prostate cancer. This pomegranate, almond and feta cheese salad is the perfect balanced combination of healthy goodness that contains plenty of antioxidants, fibre, protein and dairy.
Per person:
Seeds of ½ pomegranate
20g feta cheese
20g almonds, halved
1 small handful mixed salad leaves (the darker green the better)
A drizzle of olive oil to serve
Mix all the ingredients together. Prepare as freshly as you can before eating so none of the nutrients is lost.
