GLUTEN-FREE BANANA PANCAKES

Makes 3-4 small pancakes

Mix together 1 very ripe banana, 2 eggs, 1 tbsp of rice flour, 1 tsp of cinnamon and 1 tsp of

vanilla extract in a small bowl. Beat to make as smooth as possible, but don’t worry about small banana lumps. Heat a non-stick frying pan over a medium/high heat. Pour batter into three evenly sized pancakes in the pan. Cook for 2-4 minutes. Once the pancake can lift easily off a spatula, flip. Cook for a further 2 minutes. Serve with fresh fruit, jam, yogurt and extra sliced banana.
