A NEW distillery on the Isle of Colonsay expects to bottle and sell its first batch of gin next month.
Wild Thyme Spirits, started by husband and wife entrepreneurs Finlay and Eileen Geekie, who moved to the Hebridean island from Oxfordshire last year, aims to produce 160 bottles of Colonsay Gin for sale next month, at their new house called Tigh na Uruisg, ‘Home of the Spirit’.
The name Wild Thyme Spirits is inspired by Celtic folklore, in which ‘every house had a Brownie or Spirit, or in Gaelic, an Uruisg (oor-isk) to help with household chores’, their Facebook page says.
Finlay added: ‘Our childhood in Scotland was full of regular holiday trips to the Western Isles, and we did the same with our children, so we always held a dream of returning to live and work on a Scottish island.
‘This business provides us with the opportunity to combine our interest in gin with a desire to create a viable future on the island, and make a significant contribution to the future sustainability and ongoing development of the island economy and community.’
