STEAK, RED ONION AND TOMATO SALAD This has just 14g of carbs each and is rich in dopamine, the happy hor­mone. Serves 2. In­gre­di­ents 4 plum toma­toes, small red onion, all thinly sliced, ½tsp cracked black pep­per, veg­etable oil, 2 bavette steaks (250g each),20g but­ter, juice ½ lemon, 125g drained moz­zarella, diced, 15g basil, no stems, 2tbsp rough chopped sun­dried toms, 1 red chilli, sliced thin, with seeds, 1tbsp bal­samic vine­gar, ¾tbsp ex­tra vir­gin olive oil, flaky sea salt, 25g Parme­san cheese. Method 1 Ar­range tomato on serv­ing plate. Scat­ter on onion, sea­son with salt and half the pep­per. 2 Heat splash of oil in fry­ing pan on medi­umhigh. Sea­son steaks with salt and re­main­ing pep­per. Put in pan with but­ter, cook 4–5 mins. 3 Flip over, add lemon juice and cook for 1–2 mins, bast­ing with the lemony but­ter. 4 Let steaks rest on a warm plate for 10 mins. 5 Drain liq­uid off tomato plate. Scat­ter with moz­zarella, basil, sun-dried toms and chilli. 6 Slice beef, ar­range over salad, add its juices. 7 Mix bal­samic vine­gar and olive oil, driz­zle over salad. Grate Parme­san on top to serve.
