STEAK WITH A SMILE
STEAK, RED ONION AND TOMATO SALAD This has just 14g of carbs each and is rich in dopamine, the happy hormone. Serves 2. Ingredients 4 plum tomatoes, small red onion, all thinly sliced, ½tsp cracked black pepper, vegetable oil, 2 bavette steaks (250g each),20g butter, juice ½ lemon, 125g drained mozzarella, diced, 15g basil, no stems, 2tbsp rough chopped sundried toms, 1 red chilli, sliced thin, with seeds, 1tbsp balsamic vinegar, ¾tbsp extra virgin olive oil, flaky sea salt, 25g Parmesan cheese. Method 1 Arrange tomato on serving plate. Scatter on onion, season with salt and half the pepper. 2 Heat splash of oil in frying pan on mediumhigh. Season steaks with salt and remaining pepper. Put in pan with butter, cook 4–5 mins. 3 Flip over, add lemon juice and cook for 1–2 mins, basting with the lemony butter. 4 Let steaks rest on a warm plate for 10 mins. 5 Drain liquid off tomato plate. Scatter with mozzarella, basil, sun-dried toms and chilli. 6 Slice beef, arrange over salad, add its juices. 7 Mix balsamic vinegar and olive oil, drizzle over salad. Grate Parmesan on top to serve.
