These quick, economical recipes are ideal for the students in the family.
Prep Time: 10-15 mins Cooking Time: 8 mins Course: Main
1 x 400g can chickpeas, rinsed and drained
1 garlic clove, chopped 1 handful parsley, chopped 1 tsp ground cumin
1 tsp ground coriander
½ tsp harissa paste or chilli powder
2 tbs plain flour
2 tbs sunflower oil
Salt and freshly ground black pepper, to taste
To Serve: Primula Original Cheese; brioche buns; rocket; red onion slices
1 Place all ingredients into a food processor and season to taste. Blend until coarse. (If you don’t have a food processor, place the ingredients in a mixing bowl and blend with a hand-held blender. This will take a little longer.)
2 Carefully remove the blade from the processor and, using your hands, form the mixture into 4 large burgers.
3 Before cooking, brush lightly with oil. Place on a skillet or in a heavy-based frying-pan and cook for 3 minutes on each side until lightly golden.
4 Serve on a brioche bun with melty Primula Original Cheese, rocket and red onion slices.
