Ap­ple and Co­conut En­ergy Balls

Course: Snack Skill level: easy Makes: about 10-12

½ cup of pecans

¾ cup of oats

3 tbs shred­ded co­conut, plus ex­tra for coat­ing 6 dried figs (if pos­si­ble try to buy the ones with­out any preser­va­tives or sul­phates)

½ Jazz ap­ple, grated (skin in­cluded)

1 tbs date syrup (op­tional)

1 tsp cinnamon

1 Place the nuts and the oats into a food pro­ces­sor and blitz un­til a flour starts to form.

2 Add all the re­main­ing in­gre­di­ents and process for an­other minute or so un­til you have a sticky dough.

3 Re­move the mix­ture from the food pro­ces­sor and roll it into balls of the size you pre­fer.

4 Coat them in the shred­ded co­conut and place them in the fridge for half an hour to firm up.

These will keep in an air­tight con­tainer in the fridge for up to 2 weeks.
