Apple and Coconut Energy Balls
Course: Snack Skill level: easy Makes: about 10-12
½ cup of pecans
¾ cup of oats
3 tbs shredded coconut, plus extra for coating 6 dried figs (if possible try to buy the ones without any preservatives or sulphates)
½ Jazz apple, grated (skin included)
1 tbs date syrup (optional)
1 tsp cinnamon
1 Place the nuts and the oats into a food processor and blitz until a flour starts to form.
2 Add all the remaining ingredients and process for another minute or so until you have a sticky dough.
3 Remove the mixture from the food processor and roll it into balls of the size you prefer.
4 Coat them in the shredded coconut and place them in the fridge for half an hour to firm up.
These will keep in an airtight container in the fridge for up to 2 weeks.
