Cook­ery: quick and easy oven meals

4 chicken breasts

1 red pep­per, sliced

1 x jar Merid­ian Brazil­ian Xim Xim Peanut Cook­ing Sauce 80 g (30 oz) king prawns

To Serve: rice; fresh co­rian­der.

1 Pre-heat the oven to

180 deg. C., 350 deg. F., Gas Mark 4.

2 Lay the chicken breasts in an oven dish. Tuck the red pep­per slices around the sides and in be­tween the chicken.

3 Pour over the Merid­ian Brazil­ian Xim Xim Peanut Cook­ing Sauce. Fill a third of the jar with wa­ter and shake to re­lease all of the sauce to pour over the chicken, too. Cook for 30 min­utes (de­pend­ing on the size of the chicken breasts).

4 Af­ter 30 min­utes, add the king prawns to the dish and re­turn to the oven for 5 min­utes. Check that the chicken and prawns are cooked through and then serve with rice and sprin­kled co­rian­der.
