4 tbs seed­less fruit jam 2 tsp cus­tard pow­der 200 g (7 oz) ready-made short­crust pas­try Flour, for dust­ing

1 Blend the jam with 140 ml (5 fl oz) wa­ter and then boil in a saucepan for 2 to 3 min­utes.

2 In a small bowl, blend the cus­tard pow­der with a lit­tle wa­ter and add it to the jam mix­ture, then boil un­til the mix­ture is thick. Take off the heat and al­low to cool.

3 Pre-heat oven to 200 deg. C.,

400 deg. F., Gas Mark 6.

4 When the jam is cool, roll out the pas­try on a floured sur­face and use to line a 20 cm

(8 in) enamel plate or pie dish. Trim the pas­try and re­serve the trim­mings.

5 Spoon the cooled jam mix­ture over the pas­try base. Make a lat­tice-work pat­tern over the top with strips of the re­main­ing pas­try.

6 Bake in the pre-heated oven for about 10 min­utes, or un­til the pas­try is cooked, crisp and golden brown.
