4 tbs seedless fruit jam 2 tsp custard powder 200 g (7 oz) ready-made shortcrust pastry Flour, for dusting
1 Blend the jam with 140 ml (5 fl oz) water and then boil in a saucepan for 2 to 3 minutes.
2 In a small bowl, blend the custard powder with a little water and add it to the jam mixture, then boil until the mixture is thick. Take off the heat and allow to cool.
3 Pre-heat oven to 200 deg. C.,
400 deg. F., Gas Mark 6.
4 When the jam is cool, roll out the pastry on a floured surface and use to line a 20 cm
(8 in) enamel plate or pie dish. Trim the pastry and reserve the trimmings.
5 Spoon the cooled jam mixture over the pastry base. Make a lattice-work pattern over the top with strips of the remaining pastry.
6 Bake in the pre-heated oven for about 10 minutes, or until the pastry is cooked, crisp and golden brown.
