Sim­ple ori­en­tal spinach

By Jane Bax­ter, River­ford Field Kitchen. Taken from the River­ford Farm Cook Book (Serves 4 In­gre­di­ents:

■ 1 very large bunch fresh spinach, shred­ded

■ 1 gar­lic clove, sliced

■ 1 tbsp olive oil

■ Soy sauce, to taste Heat the oil in a large pan, add the shred­ded spinach and gar­lic and stir fry un­til wilted. Serve sprin­kled with soy sauce. Great with grilled fish.
