Simple oriental spinach

■ 1 very large bunch fresh spinach, shredded
■ 1 garlic clove, sliced
■ 1 tbsp olive oil
■ Soy sauce, to taste Heat the oil in a large pan, add the shredded spinach and garlic and stir fry until wilted. Serve sprinkled with soy sauce. Great with grilled fish.
