Edinburgh restaurants come out on top for sustainability at food awards
An Edinburgh restaurant has been named the UK’S “best new opening” in terms of sustainability in a prestigious national awards.
Fhior, lauded for its lack of foodwaste, scooped the top award, while city rival Hawksmoor was runner up in the same category at the Food Made Good Awards.
The capital’s Cafe St Honore won the Treat Staff Fairly award for the business doing most to value staff through pay – and beyond the paycheque.
Judges said that Cafe St Honore founder Neil Forbes had
created an atmosphere where he treated his staff“like his own children”, while they admired Fhior’s ability to use every part of an animal to fulfil an entire menu, reducing waste.
Elsewhere, a pizzeria using aluminium take-out boxes and a beach restaurant leading a community single-use plastic purge were also honoured.
Chef Raymond Blanc, president of the Sustainable Restaurant Association, said: “Year after year, chefs and restaurateurs continue to delight me with their winning submissions to the awards, demonstrating how food can be a powerful force for good.
“Their greatest reward would be for consumers to eat in their dining rooms and for their colleagues across the industry to follow their lead.”
The 17 winners of the Food Made Good Awards were revealed last night in London.
