Mini lime cheesecake tarts

MAKES 18

Prep 15 mins + chilling ● 110g medium-fat soft cheese

● 3 tbsp 0% fat natural

Greek yogurt

● 35g caster sugar

● Finely grated zest of 2 limes and juice of 1 lime

● 1 tsp vanilla extract

● 18 mini tart cases (we used Sainsbury’s Taste the Difference Sweet All Butter Pastry Cases)

● 12g toasted flaked almonds

1 Put soft cheese and yogurt into medium bowl and stir until smooth and combined, taking care not to over-mix. Beat in sugar, lime juice, vanilla and half lime zest. Refrigerat­e for 1-2 hrs to firm up.

2 Spoon mixture into mini tart cases, scatter over remaining lime zest and top with flaked almonds. Serve immediatel­y.
