Aus­tralian chef Lyn­dey Mi­lan gave me this recipe in­spired by a Malaysian curry, with its de­li­ciously rich peanut-spiked sauce. It looks like a long recipe but it’s fast and easy to put to­gether. I’ve tweaked it to fit Bri­tish in­gre­di­ents.
