VANILLA WAFFLES WITH FRUIT
■ 1 egg ■ 30g vanilla whey protein ■ 1 tsp gluten-free baking powder ■ 50g gluten-free flour ■ 50ml almond milk ■ 1 banana
For the topping:
■ 5 raspberries ■ 20g strawberry whey protein powder ■ 2 tbsp quark ■ Fresh fruit salad ■ 2 tbsp chopped nuts (optional)
Blend together all ingredients of the wafflfle mix, using a high-speed blender, until smooth. Now heat a non-stick wafflfle iron or wafflfle maker and brush with coconut oil – using a ladle, spoon in the batter mix and cook until golden brown and crispy.
Whip the fresh raspberries, strawberry protein powder and quark together, then pour over the waffles, add fresh fruit, and top with chopped nuts, if using.
