‘Gin is flavoured with ju­niper,’ says ni­cholas.

‘It was first made by the Dutch, who called it gen­ever, but the English couldn’t pro­nounce it, so they called it “gin”. Its calm­ing ef­fects were ap­pre­ci­ated by Bri­tish sol­diers who fought along­side the Dutch in the 80 Years’ War, this is where we get the phrase “Dutch courage”.’
