The James KM Cheng-de­signed Fairmont Pa­cific Rim has long been Van­cou­ver’s most gor­geous ho­tel, but its cav­ernous lobby was cry­ing out for a more in­ti­mate space. En­ter Botanist, the lat­est cre­ation of Van­cou­ver­based res­tau­rant de­signer Craig Stanghetta of stu­dio Ste Marie. The lo­ca­tion mar­ries dif­fer­ent eras, no­tably the 1920s and the 1980s, to cre­ate a unique fine din­ing ex­pe­ri­ence, rein­ter­pret­ing the lo­cal ver­nac­u­lar but avoid­ing the clumsy lit­er­al­ism of fir and slate to of­fer a more so­phis­ti­cated take. Sim­i­larly, the el­e­vated West Coast fu­sion cui­sine draws in­spi­ra­tion from flora and plants of the Pa­cific North­west, pair­ing Mediter­ranean el­e­ments with lo­cal in­gre­di­ents. 1038 Canada Place, tel: 1.604 695 5500, botanistrestau­rant.com
