Warm spiced tomato & cauli salad
a meal in itself or serve as a side with chicken or lamb steaks.
SERVES 4 PREP 5 MINS Cook 30 MINS
✱ 2tsp cumin seeds
✱ 2tbsp olive oil
✱ 1 small cauliflower, cut into florets
✱ 150g baby plum tomatoes
✱ 100g green beans
✱ 250g pouch cooked mixed grains (such as merchant Gourmet Quinoa, Lentils and wheatberries)
✱ Finely grated zest of 1/2 lemon heat the oven to 200°c, gas 6. heat the cumin seeds in a dry frying pan for 30 secs to toast. take off the heat, add the oil and toss the cauliflower in the mixture to coat. spread the cauliflower on a baking tray, season and roast in the oven for 15 mins. 2 add the tomatoes and roast for a further 10 mins, turning occasionally, until both the vegetables are
tender and the cauliflower is golden.
While the vegetables are roasting, cook the green beans in boiling water for 3 mins until just tender. drain.
heat the pouch of mixed grains in the microwave following packet instructions. tip into a bowl and top with the cauliflower, tomatoes and green beans. scatter on grated lemon zest to serve. Per serving: 247 cals, 11.5g fat (2g saturated), 21g carbohydrates
