✱ 2 x 200g sirloin steaks
✱ Finely grated zest & juice of 3 limes
✱ 2tbsp soy sauce
✱ 2cm piece fresh ginger, grated
✱ 1tbsp light muscovado sugar
✱ 1 red or green chilli, sliced
✱ Small bunch fresh coriander, stalks finely chopped
FOR THE SALAD
✱ 1/2 cucumber, sliced
✱ 100g cherry tomatoes, quartered
✱ Fresh mint and basil leaves, chopped
✱ 1 small red onion, sliced
✱ 100g mangetout & sugarsnaps, sliced
✱ 100g radishes, sliced
1 season steaks with black pepper, zest and juice of 1 lime and soy sauce. mix the remaining zest and juice, ginger, sugar, chilli and coriander stalks. set aside. 2 heat a griddle pan until hot. add steaks, cook for 3-4 mins on each side for medium, a bit longer for well done. remove from pan and set aside to rest. 3 combine salad ingredients. slice the steaks, place on the salad and drizzle over the lime and ginger dressing. Per serving: 256 cals, 6g fat (3g saturated), 13g carbohydrates
