Spi­ceit-up­caribbean sausages

Easy on the wash­ing-up, this meal is cooked in one roast­ing tin SERVES 4 PREP 5 MINS COOK 30 MINS

✱ 400g pack chipo­lata sausages ✱ 1 red onion, sliced ✱ 1 medium sweet potato, cut into

chunks ✱ 150g mango, cut into chunks ✱ 2tsp honey ✱ 50g Pep­padew pep­pers from a jar,

sliced ✱ 1tbsp jerk sea­son­ing ✱ 1tbsp olive oil ✱ Hand­ful fresh pars­ley, chopped

1 heat the oven to 200°c, gas 6. Put the sausages into a roast­ing tin with the sweet potato, red onion slices, mango chunks, honey and Pep­padew pep­pers. add the jerk sea­son­ing and toss well to coat the in­gre­di­ents thor­oughly. Driz­zle over the oil and sea­son. 2 roast for 25-30 mins, turn­ing and toss­ing half­way through, un­til the sausages are fully cooked and the veg­eta­bles are ten­der. Sprin­kle with pars­ley, to serve. Per serv­ing 353 cals, 23g fat (7g sat­u­rated), 25g car­bo­hy­drates
