Span­ish chorizo re­ally perks up this clas­sic fry-up

850g new po­ta­toes, halved 2tbsp olive oil 190g chorizo cook­ing sausage, sliced 2 sticks cel­ery, sliced

175g cherry to­ma­toes, halved 6 spring onions, chopped 2tbsp chopped fresh pars­ley

put the po­ta­toes in a fry­ing pan, cover with cold wa­ter, bring to the boil and sim­mer for 10 mins un­til ten­der. drain.

heat the oil in the pan, add the po­ta­toes and fry for 10 mins, turn­ing oc­ca­sion­ally, un­til golden. add the chorizo and fry for 3-4 mins un­til crisp.

add the cel­ery, cherry to­ma­toes and spring onions and heat for a few mins to warm through and soften slightly. scat­ter over the chopped pars­ley and serve.
