Spanish chorizo really perks up this classic fry-up

850g new potatoes, halved 2tbsp olive oil 190g chorizo cooking sausage, sliced 2 sticks celery, sliced
175g cherry tomatoes, halved 6 spring onions, chopped 2tbsp chopped fresh parsley
put the potatoes in a frying pan, cover with cold water, bring to the boil and simmer for 10 mins until tender. drain.
heat the oil in the pan, add the potatoes and fry for 10 mins, turning occasionally, until golden. add the chorizo and fry for 3-4 mins until crisp.
add the celery, cherry tomatoes and spring onions and heat for a few mins to warm through and soften slightly. scatter over the chopped parsley and serve.
