Choco­late macadamia brown­ies Serves 20

You will need

400g dark choco­late (at least 70% co­coa solids) 250g un­salted but­ter 4 large free-range eggs

185g caster sugar 75g soft brown sugar 1tsp bak­ing pow­der

60g plain flour, sifted 125g toasted macadamia nuts

How to do it

1 Heat the oven to 170°C. Melt the choco­late and but­ter in a heat­proof bowl over a pan of just-sim­mer­ing wa­ter. Set aside to cool. In an­other bowl, whisk the eggs with both of the sug­ars un­til thick and creamy. 2 Mix the bak­ing pow­der into the flour. Once the choco­late is cool, al­ter­nately fold the choco­late and flour into the egg mix­ture. Stir in the nuts and pour into a lined and greased oven­proof tin and bake for 20-25 mins, un­til the top has cracked. Leave to cool com­pletely in the tin be­fore cut­ting it into squares.
