Av­o­cado and cour­gette gou­jons

there’s some­thing so mor­eish about the combo of the crunchy out­side and the soft cen­tre of these veg­gie fin­gers.

You will need:

✽ 1 medium egg, beaten ✽ 2tbsp plain our, sea­soned ✽ 50g panko bread­crumbs, mixed with

50g nely grated Parme­san ✽ 1 un­ripened av­o­cado, sliced length­ways ✽ 1 cour­gette, sliced length­ways ✽ 250ml oil, for shal­low fry­ing

How to do it:

1 Put the egg, flour, bread­crumbs and Parme­san mix in three sep­a­rate bowls. 2 Dip the av­o­cado and cour­gette slices in flour, fol­lowed by egg, then coat in crumbs. Re­peat with the rest of the veg. 3 Heat the oil in a fry­ing pan and cook the cour­gette and av­o­cado fin­gers for a cou­ple of min­utes on each side, un­til golden, keep­ing the cooked ones warm in the oven. Serve along­side your favourite dip.
