Avocado and courgette goujons
there’s something so moreish about the combo of the crunchy outside and the soft centre of these veggie fingers.
You will need:
✽ 1 medium egg, beaten ✽ 2tbsp plain our, seasoned ✽ 50g panko breadcrumbs, mixed with
50g nely grated Parmesan ✽ 1 unripened avocado, sliced lengthways ✽ 1 courgette, sliced lengthways ✽ 250ml oil, for shallow frying
How to do it:
1 Put the egg, flour, breadcrumbs and Parmesan mix in three separate bowls. 2 Dip the avocado and courgette slices in flour, followed by egg, then coat in crumbs. Repeat with the rest of the veg. 3 Heat the oil in a frying pan and cook the courgette and avocado fingers for a couple of minutes on each side, until golden, keeping the cooked ones warm in the oven. Serve alongside your favourite dip.
