Tasty recipes: Five-a-day faves to perk you up
Wraps are a great standby dinner for the whole family.
You will need:
✽ 1 aubergine ✽ 400g tin chickpeas, rinsed and drained ✽ Juice of ½ lemon ✽ 2tbsp tahini paste ✽ 2tbsp olive oil from sun-dried
tomatoes in oil ✽ 1 garlic clove, crushed ✽ 6 tortilla wraps ✽ 4 large slices ham, torn ✽ 1 yellow pepper, sliced ✽ 1 avocado, sliced ✽ ¼ red cabbage, shredded and tossed with lemon juice or mayonnaise and grated cheese ✽ Small handful cherry tomatoes, halved ✽ Baby spinach
How to do it:
1 Wrap the aubergine in clingfilm and microwave on high for around 5-8 mins, until soft. Leave to cool, then scoop out flesh. 2 For the houmous mix put the aubergine flesh in a food processor and add the chickpeas, lemon juice, tahini paste, sun-dried tomato oil, garlic and some freshly ground black pepper. Whizz until almost smooth. 3 Spread each wrap with a little of the houmous mix, top with ham, then pile in the pepper and avocado slices, cabbage mix, cherry tomatoes and spinach leaves. Serve.
