Wraps are a great standby din­ner for the whole fam­ily.

You will need:

✽ 1 aubergine ✽ 400g tin chick­peas, rinsed and drained ✽ Juice of ½ lemon ✽ 2tbsp tahini paste ✽ 2tbsp olive oil from sun-dried

toma­toes in oil ✽ 1 gar­lic clove, crushed ✽ 6 tor­tilla wraps ✽ 4 large slices ham, torn ✽ 1 yellow pep­per, sliced ✽ 1 av­o­cado, sliced ✽ ¼ red cabbage, shred­ded and tossed with lemon juice or may­on­naise and grated cheese ✽ Small hand­ful cherry toma­toes, halved ✽ Baby spinach

How to do it:

1 Wrap the aubergine in cling­film and mi­crowave on high for around 5-8 mins, un­til soft. Leave to cool, then scoop out flesh. 2 For the hou­mous mix put the aubergine flesh in a food pro­ces­sor and add the chick­peas, lemon juice, tahini paste, sun-dried tomato oil, gar­lic and some freshly ground black pep­per. Whizz un­til al­most smooth. 3 Spread each wrap with a lit­tle of the hou­mous mix, top with ham, then pile in the pep­per and av­o­cado slices, cabbage mix, cherry toma­toes and spinach leaves. Serve.
