Stir-fried turkey chunks with green veg­eta­bles and sprin­kled toasted al­monds

Serves 4

You will need

✽ 2tbsp ground­nut oil

✽ 350g turkey strips

✽ 3 cloves of gar­lic, chopped

✽ 1 thumb-sized piece of gin­ger, peeled and cut into thin match­sticks

✽ 3 spring onions, sliced ✽ 1 red chilli, finely sliced

✽ 1 cour­gette, sliced

✽ 1 large hand­ful of kale, sliced

✽ 1 green pep­per, de-seeded and sliced length­ways

✽ 200g Ten­der­stem broc­coli, trimmed

✽ 2tbsp soy sauce

✽ 1 lime, juiced

✽ 50g toasted flaked al­monds

How to do it

1 Heat 1tbsp of the oil in a large non-stick wok, set over a high heat. 2 Add turkey breast and fry for 5 mins un­til cooked through. Trans­fer turkey to a plate and then set aside.

3 Wipe wok with kitchen pa­per then heat a fur­ther 1tbsp of oil in the wok. 4 Add veg­eta­bles to the wok and fry for around 5 mins. Splash a cou­ple of ta­ble­spoons of wa­ter into the pan as you go to help steam veg­eta­bles.

5 Add turkey to the pan and cook for a fur­ther minute to heat through. 6 Take wok off the heat and add the soy sauce and lime juice, then stir to com­bine. 7 Sprin­kle al­monds over the stir-fry be­fore serv­ing.
