Breakfast Cherry porridge
Cook 50ml porridge oats with 150ml almond milk. Top 4 (de-stoned) cherries and 1 tablespoon of pumpkin seeds.
Lunch Open chicken and salad sandwich
Slice 4 radishes and 1 spring onion. Combine with a handful of watercress. Slice 1 roasted chicken breast and coat in a dressing made from 1 tablespoon of Greek yoghurt, the juice of ½ a lemon and 1 teaspoon of chopped mint. Toast 2 thick slices of rye bread and divide the mixture between them.
Dinner Cheesy stuffed turkey breast with sweet potato chips
Make a deep pocket in a large turkey breast and fill with 20g mozzarella, and 2 tomato slices. Pan-fry and serve with 1
sweet potato sliced into chips and cooked in the oven, and a large salad.
